Meal Prep

Okay, it’s time to get down to business. I had my fair share of cakes & cookies over the holidays. Now let’s see if we can’t get this diet of mine back on track!

Meal-prepping. It can seem intimidating, but I knocked out a handful of meals for the week in about an hour (that included going to Kroger to pick up the food!).

I love chicken so I picked up all sorts of it. Including the Gardein Chick’n Strips (love these) that aren’t even chicken…they’re soy & quinoa! Speaking of quinoa, also in the freezer section I grabbed some of Kroger’s Simple Truth Quinoa-Breaded Chicken Strips! So good….and so much protein in one meal.

For this week’s meals, I made the Chick’n Strips & the Quinoa-Breaded Chicken Strips. I also snagged a couple bags of mixed veggies to cook up in the skillet & include in my containers. More Simple Truth…. some chicken breasts, green beans, & for some flavoring…Sweet & Spicy Bar B Q sauce. Knowing I would work up an appetite cooking everything, I made sure to grab some of Kroger’s shredded chicken in their pre-made section to eat for dinner as well 😃

Next week, I’ll mix in some fish to keep from getting bored eating the same thing all the time. Hellooooo Kroger Seafood 😃

Don’t be overwhelmed by the idea of meal-prepping. Kroger really does make it so easy to get good, quality meals in throughout the week with an array of different options. Here’s to eating some better food in 2018!
